A few years ago, the Australian Conservation Foundation had some great information about the impact of food. At 40%, apparently food is the biggest single component of our ecological footprint. Most of this comes from red meat and dairy, so having a meat-free meal once a week can make a really big difference.

I like making a vegetarian lasagna. You can grate, layer, blend or mash veges that you like and then drown them in the pasta sauce and it tastes really good, not really that much different to meat. Use lots of carrot and onion and then add veges like zucchini, broccolli, even sweet potato. 

I really want to try to cook more vegetarian recipes but it requires time, effort and bravery. I like pulses like split peas but I don't really like the taste of some beans so I'm a little afraid about getting even more put off but cooking something that tastes terrible.

Can anyone recommend any really nice recipes for a beginner like me to try?
